Sausage and Cheddar Bread Pudding
•1 package Aunt Millie’s White Dinner Rolls, torn into ½” pieces
•1 lb. sweet or spicy pork sausage, casings removed (if applicable)
•1 Tbsp. butter
•1 med. onion, chopped
•2 ½ c. grated sharp cheddar cheese
•½ c. chopped fresh parsley
•2 c. milk
•¼ tsp. salt
•¼ tsp. black pepper
Directions: Yield 6 servings
In a large sauté pan, cook the sausage until browned, about 10 minutes, being sure to break up into small pieces while cooking. Remove sausage from pan and place into a large bowl. Do not clean the pan.
Add the butter to the same pan and cook onion until soft and translucent, about 5 minutes. Add the onions to the bowl with the sausage.
Add the bread pieces, cheese and parsley and stir well. Place into a greased 9” x 13” baking dish.
In a medium bowl, which together the eggs, milk, salt and pepper.
Pour the egg mixture evenly over the bread mixture. Cover and refrigerate overnight.
Preheat oven to 350 degrees. Bake for one hour, or until golden brown.
